Effects of Soybean Extract on Growth and Metabolism of Clostridium perfringens and Some Human Intestinal Bacteria

Abstract

|
Effects of soybean extract on growth of human intestinal bacteria including Clostridium perfringens and their metabolism were investigated. The ethylacetate fraction of soybean (SEF) showed strong growth-inhibition effects on C. perfringens as measured by agar diffusion analysis. Viable cell counts in the gut-simulating fermentor which was inoculated with human feces showed that populations of Bifidobacterium spp. and Lactobacillus spp. were not affected by SEF, while population of C. perfringens were decreased from initial 10©÷efu/§¢ to less than 10©öcfu/§¢, which represented one millionth the viable counts of the control culture. Bacteroidaceae and E. coli amounts also decreased in SEF-treated cultures. ¥â-glucuronidase and nitroreductase activities which were evident in the control cultures were not detectable in the SEF cultures. The putrefactive metabolites indole and ammonia decreased markedly in the SEF cultures. These results suggest the possibility that the soybean fraction found in the human intestine may aid in altering microflora and metabolites for production of favorable intestinal environments.
